Chilled and whole bunch pressed, tank fermented, 30% transferred to a 500 liter French oak barrel, the remainder resting on the lees for 7 months, resting another 8-12 months in bottles before release. Captivating nose of tropical fruit (maracuya/mango), citrus and orange blossoms, with an interesting volcanic mineral undercurrant.
